water bath or no water bath for cheesecake?
The recipe didn't say to use a waterbath, but most of the comments said to use it.
so should i? i heard from a lot of people on the internet that said that if you use a water bath, the water will leak into the cake no matter how much of heavy duty foil you use.

if i put a pan of water under my cake while baking, how long do i bake it for? same as the orignal recipe?
hte recipe told me to bake it for 1 hr then leave it in for 5-6hrs. if i use a water bath, do i still have to leave it in for 5-6hrs?
I always use a waterbath regardless of what the recipe says. And if you are careful, it should not leak. The waterbath is important because It keeps the moisture in, prevents the cheesecake from cracking, and makes it taste more creamy. I like to cook the cake on 400 degrees for one hour. Then turn off the oven and just let the cake sit in the oven for 5 hours. This way the cake does not come out of the oven into the cold air right away. Bringing it down to room temp slowly will allow it to set better. Once you remove it from the oven, put it in the refrigerator for at least 8 hours before serving for best results. GOOD LUCK!
