Boiling off alcohol?
Due to religious concerns, I cannot consume any alcohol, however I need to create a dish where alcohol is a core ingredient. I cannot substitute, but I can boil off the alcohol.
However, I've never done this before, and it occurs to me that a vapor of ethyl alcohol approaching my burner good lead to some very bad times!
Has anyone tried boiling off alcohol? Is it a common practice? Is it SAFE? What are the best methods?
To be cautious, I planned to pour the alcohol into a pyrex measuring cup, and place that in the middle of a large pan. I would insert a candy thermometer into the alcohol to monitor it's temperature. I'd fill the pan around the pyrex with water. I'd make sure the temperature wouldn't pass 170º, as the boiling point of pure ethyl alcohol is 173º.
Whoa is right! You are taking chances. If the alcohol is going into a meal to be cooked, it will be cooked off then. So no need to boil it off.
